Picky eaters? Betcha they’ll love these made-from-scratch pancakes from FIT4MOM’s Body Back Nutrition Guide and Recipe book that you whip up for a hearty breakfast… or dinner (no judgement)! Make a stack of big ones for your big kids or silver dollar-sized ones for your littlest eaters who prefer their hands to utensils. Serve with a side of fruit.

Blender Oatmeal Pancakes

1/2 cup quick-cook oatmeal (dry)
1/4 cup cottage cheese or plain yogurt
2 whole eggs or 3 egg whites
1 tsp vanilla extract
1/4 tsp cinnamon
1/4 tsp nutmeg

1/8 tsp salt

Toppings: Applesauce or maple syrup

Process all ingredients in a blender or food processor until smooth. Lightly spray nonstick pan with cooking spray. Heat pan to medium and spoon batter onto pan. When telltale bubbles appear on the top side of the pancake, flip and cook the other side. Serve with applesauce or maple syrup and a side of fruit.
