Blender Oatmeal Pancakes
1/2 cup quick-cook oatmeal (dry)
1/4 cup cottage cheese or plain yogurt
2 whole eggs or 3 egg whites
1 tsp vanilla extract
1/4 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt
Toppings: Applesauce or maple syrup
Process all ingredients in a blender or food processor until smooth. Lightly spray nonstick pan with cooking spray. Heat pan to medium and spoon batter onto pan. When telltale bubbles appear on the top side of the pancake, flip and cook the other side. Serve with applesauce or maple syrup and a side of fruit.
