RALEIGH, N.C. — This state fair-inspired taco is a must-try from 13 Tacos and Taps!

You can either get it at the restaurant or try to make it yourself using the recipe below:

Everything you love about sausage and peppers at the State Fair, all in a taco! This taco includes a bacon-wrapped sausage link, peppers and onions, black bean puree, ketchup and cilantro, all in a flour tortilla.

  • 2 Italian Sausage (spicy)
  • 8 Strips Smoked Bacon
  • 6 oz combined Red Bell, Poblano Pepper, Red Onion – cut in ¼ strips
  • 2 Serrano Peppers cut into rounds (nickel thickness)
  • 4 oz Black Bean Puree (season black bean to taste with salt, garlic, pepper & cumin)
  • 6 ea 4.5” flour tortillas
  • 2 oz ketchup
  • Cilantro Sprigs

Grill Sausage to medium

Cut cooked sausage approx. .75” thick pieces

Cut each strip of bacon in half

Wrap Sausage with Bacon – secure end with toothpick

Puree the black bean and season to taste (your choice or Chef’s recommended spices above)

Warm black bean puree and set aside

Sear vegetables until light caramelization – (not overwhelmingly soft)


1. Heat Beans, set aside

2. Heat flour tortillas

3. Spread black beans on each tortilla

4. Place 2 pieces of Sausage on each Tortilla

5. Top with vegetables

6. Dollop of Ketchup

7. Place Cilantro sprig on top
