Beer-Braised Pork Shanks with White Beans and Baby Artichokes
Servings: 4
Preparation time: 10 minutes
Start to finish time: 2 hours

Ingredients8 whole smoked pork shanks
32 ounces beer
6 whole garlic cloves
1 medium yellow onion
4 ounces olive oil
4 cups white beans, soaked, drained and cooked until firm
2 cups chicken broth
8 whole baby artichokes, cleaned and boiled in lemon water
1 sprig fresh thyme
1 whole bay leaf
2 tablespoons parmesan cheese
salt and pepper, to taste
2 ounces chopped parsley

Recipe
In a large pot, place pork shanks with beer, garlic, onion, chicken broth, thyme and bay leaf.
Place on medium heat and cover. Cook for approx. 1.5 hours
When pork shanks are tender, remove from pot and set aside.
