New kitchen space helps Triangle restaurants get off the ground

A new space in Raleigh is helping food entrepreneurs take their businesses to the next level even if they may not have the immediate financial resources to open a restaurant when they want.

RALEIGH, N.C. — A new space in Raleigh is helping food entrepreneurs take their businesses to the next level even if they may not have the immediate financial resources to open a restaurant when they want.

The Kitchen Archive allows would-be restaurateurs to rent space in order to work and get their fledgling business off the ground.

The space is a valuable resource for food truck operators or those just entering the dining business.

When Manhattan Cafe in downtown Raleigh needed extra space to expand its business catering business, its owner turned to Kitchen Archive.

"We're doing good volume downtown (and) seeing 400 to 500 customers a day for lunch," said Casey Vorbeck, an owner of the dining spot. "We just ran out of room."

A kitchen archive allows the cafe's managers to "do an extra kitchen," Vorbeck said.

Will Pettis is the owner of the Kitchen Archive, and says the space fulfills a major need in the the Triangle's growing food scene.

The facility in Raleigh and the original one in Durham provides entrepreneurs with room to expand.

"We just try to do what we can to help people to grow their business and move into a restaurant like Manhattan Cafe or the other people who have their own restaurants," Pettis said.

The rate for businesses that turn to the Kitchen Archive start at $500 per month.

The Raleigh location has signed up about 24 clients since it opened.

Kitchen Archive is not alone.

There are at least four commissaries for rent in the Triangle.

The Fayetteville City Council was expected to consider funding for a non-profit agency's culinary incubator, which has been in development for years but has not issued a timetable for construction.
