NC celebrates all things sweetpotato

Watch out avocado toast, sweetpotato toast is the next big thing.

RALEIGH, N.C. — The North Carolina SweetPotato Commission is celebrating its 60th anniversary this year.

They spell "sweetpotato" as one word to "align with the scientific spelling and to avoid confusion with the white potato," according to the commission.

The Sweetpotato Commission, obviously, wants everyone to eat more sweet potatoes - the state's official vegetable.

But what makes North Carolina sweet potatoes so different from ones grown elsewhere?

"From the North Carolina agriculture perspective, sweet potatoes were almost as if they were made specifically for our growing conditions. We have ideal soil is...sandy and drains beautifully, which a sweetpotato really likes that sandy draining soil. We also have very warm climates and...a sweetpotatoes is a tropical vegetable at the end of the day," North Carolina SweetPotato Commission executive director Michelle Grainger said on this week's WRAL Out and About Podcast.

The conditions mean that sweetpotatoes can be sourced year-round, which has helped the state become the No. 1 sweetpotato producing state in the country.

While we are often thinking about sweetpotatoes around Fall, Grainger said that the commission has been focused on sharing recipes that are beyond the traditional pie or baked variety.

"The North Carolina sweet potato commission has many recipes that utilize sweet potato as a natural sweetener for their desserts and sweet treats," Grainger said, noting she has seen sweetpotato mixed with chocolate to make cake icing.

Grainger said that outside of casseroles and souffles, sweet potatoes are also a great alternative to avocado toast. The sweetpotatoes are used inside of bread and topped with sweet or savory options.

"We even have sweetpotato smoothies, which are an excellent, refreshing, item to have during summer," Grainger said.
