Monday meal plan 8/22
On the menu this week we have Greek pasta and spinach salad, garlic shrimp, pulled BBQ chicken sandwiches, zucchini, spinach and tofu lasagna, and more!

Hot dogs (Hebrew National 97% fat free beef dogs were on sale BOGO a couple weeks ago)
Pasta Salad
Watermelon (on sale at Kroger this week)
I am also taking some time today to batch cook some blueberry pancakes and cinnamon French toast for the kids to enjoy once school starts on Thursday. On Tuesday, I'll be batch cooking some tortilla, scrambled egg and cheese roll-ups on Tuesday. I will cook them up, cool them off and freeze them in single serving foil packets. When the girls are ready for their early morning school breakfasts, we can either microwave or toast them and enjoy! No stress and a delicious, healthy, warm breakfast. Life is good.
Breakfast casserole – it was on the menu last week but we ended up having something else so here it is again on the menu this week.
Cantaloupe (HT has them on sale Buy 1 Get 2 Free making them only $1.31 per cantaloupe. We have eaten a lot of cantaloupe this week!)
Grilled chicken (on sale at Kroger through Saturday for $1.99/lb)
Garlic shrimp
Pasta with light butter and parmesan
Steamed carrots (regular price of carrots is $1.17 for a 2 lb bag at Harris Teeter - a good deal!)
Not sure yet – may have out of town guests joining us for dinner – will probably involve grilling something
Pulled BBQ chicken sandwiches (chicken cooked in slow cooker and on sale at Kroger through Saturday for $1.99/lb)
Long grain and wild rice
Salad
Fruit – waiting to see what is on sale starting Wednesday
