This week at Cafe' Prosser, we are enjoying grilled chicken breasts, grilled turkey sausage, veggie frittata, shrimp quesadilla and creamy tofu and mushrooms.
What's on your menu for the week?
Grilled boneless skinless chicken breasts (marinated in Wish-Bone Romano Parmesan dressing)
The chicken was on sale at Harris Teeter a couple weeks ago for $1.66/lb. They are on sale this week at Kroger through 5/14 for $1.97/lb, at Lowes Foods through 5/19 for $1.99/lb and the split chicken breast is on sale at Harris Teeter for .97/lb through 5/10.
Tomato, bread and cheese frittata
I found the recipe in this week’s Parade magazine but I am changing some ingredients to make it healthier and more frugal and to accommodate ingredients I have on hand. I am substituting the following:
Skim milk instead of the heavy cream in the recipe
No red peppers because they are ridiculously priced and instead I am using more green peppers and sliced mushrooms
Texas Toast seasoned croutons instead of day old bread because I have them on hand and we love the taste of croutons in egg casseroles
2% Kraft shredded cheese instead of ricotta because it is healthier and I have it on hand purchased frugally with sale and coupons
No butter or oil used – only fat free non-stick spray

Sides: Veggie bacon and fruit (NC strawberries on sale at Food Lion for $1.25/lb through 5/10)
Shrimp, spinach and cheese quesadillas (frozen shrimp BOGO at Food Lion through 5/10, tortillas and sour cream on sale at Lowes Foods with coupons through 5/10)
I am working late so hubby is in charge of sandwich night!
Creamy tofu and mushrooms on egg noodles. This is the recipe I was going to try last week but we had a change of plans so it is on the menu for this week. I’ll post the recipe once I figure it out! :- )
Out to dinner probably with a Groupon, Twongo or Living Social coupon
Grilled Butterball smoked turkey sausages (bought months ago for a great deal with coupon)
Whole wheat buns
Sauteed mushrooms, green peppers and onions to go on the sausages (sauteed in non-fat non-stick spray)
Pasta salad with chopped tomatoes, onion, black olives, green pepper and a combo of light mayo and light ranch dressing
Fruit (probably cantaloupe or watermelon slices)
