Posted — UpdatedIt's March Monday Meal Plan Madness considering that BOTH UNC and Duke have moved on to the next round! On the menu this week we have salmon burgers, egg and tortilla roll-ups, Shrimp and pasta, grilled chicken and more.
What's on your frugal menu this week?
Salmon burgers (bought BOGO at Lowes Foods last week for $3, I think))
Yellow saffron rice (free with sales and coupons)
Sugar snap peas (Green Giant frozen veggies .60 with sale and coupon)
Ronzoni garden variety pasta was free with sale and coupon a few weeks ago at Food Lion, Classico pasta sauce is .27 with e-Vic sale and $1 peelie coupon I had that was on the box of pasta I bought….for free! There are a number of Ronzoni pasta varieties free at Kroger this week with the Mega Event sale and coupons.
Broccoli with a little Bestlife buttery spray and a sprinkle of cheddar cheese (my kids like green veggies a lot more if it has just a little cheese! They also love the no calorie Bestlife buttery spray – which will be a good deal at HT super doubles on Wednesday with the $1 coupon)
Orange slices (bought on sale for .74/lb in 8 lb bag – on sale this week at Kroger for $5.99 for 8 lb bag)
Egg and cheese tortilla roll-ups with salsa (if you got the HT egg deal on Saturday, this is a good way to use them)
Mexican rice
Fruit salad including pears, apples and grapes (all on sale at Kroger for $1.29/lb) and pineapple chunks from a can of Dole pineapple that was a great deal during Super Doubles a few months ago
Shrimp and pasta (using BOGO frozen shrimp from Food Lion and free pasta) with sauteed mushrooms, onions and green peppers
Rolls (bought free during last HT super doubles)
More orange slices (an 8 lb bag has a lot of oranges!)
Sandwiches and soup night
Sandwich choices include veggie burger, veggie chicken patty, tuna, turkey. Bread choices include honey wheat or Pepperidge Farm rye bread which is on sale for $2.50 with .75/2 coupon at HT through 3/22. We also have the American cheese slices that are .40 per package at Lowes Foods through 3/22 with store coupon and manufacturer’s coupon. Tomatoes are on sale at Kroger this week and I will wait to see who has lettuce on sale on Wednesday.
Soup – choice of soups in the pantry – kids always choose chicken noodle!
Not sure yet – maybe some grilled chicken using the e-VIC deal we should be getting from HT on Wednesday for frozen chicken breast,2.5 lb bag for $3.99 = $1.59/lb – a great deal!
