What's on your menu this week?
Tyson chicken breast tenders (25 oz bag was $3.55 with coupon doubled at HT this week – doubling good through 1/11)
Sweet potatoes (.39/lb bought from local farmer in bulk)
Spinach salad (free bag of Dole spinach from Food Lion with text offer I posted about a couple days ago – still valid so click on the link in the box above for the details)
Spinach, rice and cheese quesadillas with guacamole (free at Lowes Foods this week with $2 printable I posted last week)
Cajun chicken, shrimp and pasta frozen T.G.I. Friday’s meal that was BOGO a couple weeks ago (and I had a coupon, of course!). I’ll be adding extra whole wheat pasta and shrimp to stretch the meal for 4 people.

Eye of round roast – I am trying to decide between a slow cooker recipe and a unique oven baked recipe. The oven baked one uses a new approach for me – cook on 475 degrees for 7 minutes per lb and then let sit in closed oven for 2 and 1/2 hours. The reviews are great for this version. The slow cooker recipe is so nice because I can include the veggies in with the roast, put it in the slow cooker that morning and it's ready for dinner.The recipes are in the box above. Take a look and let me know what you think.
Anyone ever bake a roast in the oven like this before?
