Now that the tomatoes have begun to ripen in the garden, I could seriously have homegrown tomato and cucumber sandwiches every single night this summer! But, alas, my family is not as tomato crazy as I am. So, here are the meals for the week but keep in mind that just about every day for lunch I am having that sandwich – including today!
Tuna salad served on a bed of romaine lettuce with tomatoes, cucumbers, onions and croutons
Peach slices (.99/lb at Kroger this week)
Semi-homemade pizza with 2 Mama Mary’s pre-made crusts bought during super doubles a couple months ago, .49 bag of Kraft cheese from Kroger this week (with $5 promo and $1.00/2 coupon), garlic, onions, black olives and fresh spinach and tomato from the garden
Tomato and cucumber salad with light Italian dressing
Grapes (.97/lb at Lowes Foods through 7/13)
The crusts come in a package of 2, so I made 2 pizzas and used 4 oz cheese per pizza. There is enough leftover for lunch tomorrow!
Total cost of 2 pizzas, salad, grapes and milk for the kids: $4.00
Grilled herb and garlic chicken (on sale at Lowes Foods 2 weeks ago for $1.79/lb)
Grilled zucchini and squash from the garden (they are also on sale for .99/lb at Kroger this week)
No yolks noodles (.29 with sale and coupon at Lowes a few weeks ago) with a little butter (Bestlife free at Food Lion through 7/13), parmesan and chopped fresh tomatoes
Total cost of meal: less than $3.00!
Spinach quesadillas (tortillas on sale for $1 at Kroger this week, spinach and tomatoes from the garden, cheese .49/8 oz from Kroger this week with $5 promo and coupon)
Sandwich buns ($1 on sale at Kroger this week)
Long grain and wild rice
Salad (because you can really never have enough homegrown tomatoes and cucmbers!)
Grilled London broil – on sale at Food Lion through 7/13 for $2.59/lb (see link to cooking directions in the box above)
Mashed potatoes (potatoes on sale at HT and Lowes through 7/13)
Not quite sure yet but I am guessing there will be tomatoes involved!
