Posted — UpdatedSometimes ignorance is bliss. Like not knowing what goes on when the grandparents are watching your kids. You know stuff goes on that you probably wouldn’t allow. But they’re grandparents, and in my book, they’re allowed to spoil, within reason. I just don’t wanna know.
My mom just got into town and she showed me some pictures she’d taken the last time she was in town. As I was looking through them I noticed a picture of my seven-year-old daughter Campbell with what appeared to be a guinea pig on her head. The pig was holding on for dear life. I said “Mom, where was I when this was taken?” She said, “Oh Hon, you were out to dinner with Randall.” Reeaaallllly.
This recipe is from a grandparent, my mother-in-law. It’s a very easy and delicious comfort food dish.
2 lbs frozen, cubed hash browns THAWED
1 cup chopped onions
1 can cream of chicken soup
1 pint sour cream
½ cup melted butter
1 cup shredded cheddar cheese
2 tsp salt
Preheat oven to 350 degrees. Mix all ingredients together and spread in a 9 x 13 baking dish. Bake for one hour until top turns golden brown.
Serves 4-6
