Linzers Like You’ve Never Tasted

In the hands of Heidi Riegler, the baker and owner of Vienna Cookie Company in Baldwin, New York, the classic jam-filled Linzer cookie has become a panorama, with a dozen variations. Brandied cherry and lemon-blueberry are among the fillings. The pastry is made with walnuts, almonds or neither, with gluten and without. White or dark chocolate glazed cookies are also available.
