This recipe actually calls for hot chocolate mix.

Hot Chocolate Cookies

Adapted from The Spruce Eats
1/2 cup hot chocolate mix (This took three packets of Starbucks hot chocolate mix that I had on hand.)
1 1/3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
8 tablespoons butter, softened
1/2 cup brown sugar
1 egg
1 1/2 teaspoon vanilla extract
15 regular-sized marshmallows (halved)

1/4 cup mini chocolate chips

Preheat oven and line cookie sheets with parchment paper,

With a mixer, combine the butter, sugar, egg and vanilla.

In another bowl, mix together the hot chocolate mix, flour, baking powder, salt and mini chocolate chips. Add the dry ingredients to the wet ingredients and mix until combined.

Scoop a couple of teaspoons full of the batter and drop each onto the prepared cookie sheets. Bake for 8 minutes. Take the cookies out of the oven and top each with a halved marshmallow, pressing down gently on each one. Bake for another three to four minutes. Let cool on a wire rack before serving.
