Healthy Recipe: Oven roasted cherry tomatoes from The Duke Diet

There are so many ways to eat these delicious oven roasted cherry tomatoes from on their own to over pasta, fish or chicken. So good! The recipe comes from The Duke Diet, the world-renowned program for healthy and lasting weight loss developed by experts at Duke University.

 

Ingredients
  • 2 pints cherry tomatoes
  • 4 tsp olive oil
  • 4 cloves garlic, minced
  • ½ tsp salt
  • 1 tsp black pepper
  • ¼ cup basil, thinly sliced
Directions

Preheat oven to 425ºF. Mix all ingredients in a bowl and place in baking pan. Cook in preheated oven for 12-15 minutes until the tomatoes start to split.

Servings: 4, serving size, 1/2 cup.
