Healthy Recipe: Black beans with cilantro in the slow cooker

She had a good point. So I promised we'd feature a week of healthy recipes in 2011. We're starting today!
Black beans play a big role in my family's diet. They're high in fiber, low in fat and provide an excellent source of cheap protein. We eat lots of them over rice, in tacos or salads. But I hate sitting over pots, watching things cook. So we usually ended up buying canned beans.
We ate the beans on top of rice and then rolled them up in some flour tortillas the next night, doctoring it up with a little cheese, salsa and sour cream (low fat of course). Delicious. And we still had plenty to stick in the freezer for another night.
