Gonza Tacos founders to open Latin restaurant

RALEIGH, N.C. — The founders of Gonza Tacos y Tequila announced plans Thursday to open a Latin restaurant in Raleigh.
Gonza Salamanca and Carlos Rodriguez plan to open Macondo Latin Cuisine this fall in the mixed-use Sojourn Glenwood Place Apartment community, located at 3710 Exchange Glenwood Place in Raleigh.

Rodriguez describes the vision as “a straight forward simple culinary driven menu, but with highly complex flavors.”

“This was an opportunity for us to go back to our Colombian roots and the food we grew up on,” Salamanca said. “Latin food is so much more than tacos, and by bringing the unique ingredients of South America to the Triangle, we hope to showcase the incredible foods Latin America has to offer.”

Macondo is set to serve a rotating menu of small tastes of traditional Latin flavors.

Award-winning Colombian chef Santiago Macias is consulting on the menu, while Gonza Tacos y Tequila Executive Chef Jose Miguel is adding his South American culinary skills to the venture.

“After seven years, Gonza Tacos y Tequila has its own identity, and is highly successful, so we didn’t want to stray too much from that concept,” Rodriguez said. “With Macondo we are able to start the next chapter and showcase in a direct way, our South American background.”

The bar menu will offer Latin inspired craft cocktails.

Gonza Tacos y Tequila has five locations in the Triangle and is also the current WRAL.com Voters' Choice Award winner for best tacos.
