Today's Frugal Recipes post includes 2 pork recipes for Pulled Pork Sliders & Pork and Sauerkraut using sales at Food Lion, Aldi and Harris Teeter!

Every week, cookbook author (and blog reader) JoAnn Janke will share recipes based on the grocery store sales for the week. She will pick out a couple of items that are on sale and post a recipe based on those ingredients.

When you don't have time to think about a meal plan, this is the perfect solution!

Food Lion has Boston Butt (Pork shoulder) on sale for $1.29 per pound. This is a good price and you get a ton of meat. Food Lion also has Gold potatoes, 2- 5 pound bags, for $5.00. Aldi has Hawaiian Sweet Rolls for $1.99 for a 12 pack. Harris Teeter’s regular price on their brand of sauerkraut is $1.19 per one pound bag. Here are TWO recipes for you to enjoy for a very frugal price. Each recipe serves 4-6 people.

PULLED PORK SLIDERS

Ingredients

7-8 pound Boston Butt, trimmed of some fat

***** Use half of the meat for the Slider recipe. Put the other half in a container to use another night for Pork & Sauerkraut (recipe follows).

Grill seasoning (or salt, pepper and garlic powder)

Cooking spray

BBQ sauce (see recipe below)

Slider rolls

Directions

Spray a slow cooker insert with cooking spray. Place meat in, fat side up and sprinkle with grill seasoning OR mixture of salt, pepper and garlic powder. Cook on low for 8 hours or high for 5 hours. You don’t need to add any liquid as the fat will melt and baste the meat while it cooks. When the meat is done, remove the bone and carefully transfer the meat to a platter and shred with two forks.

Start the BBQ sauce about 30 minutes before serving dinner. Once the sauce is done, pour over the meat and stir to coat well. Serve on slider rolls. Serve with chips and pickles or carrot and celery sticks.

BBQ Sauce

1 medium sweet onion, sliced thin

2 tablespoons olive oil

2 cups ketchup

1/3 cup brown sugar (light or dark)

3 tablespoons apple cider vinegar

1/2 cup water

¼ cup molasses

1 teaspoon dried ginger

1 tablespoon chili powder

½ teaspoon garlic powder

¼ teaspoon cayenne OR few drops of hot sauce, optional

Heat olive oil in large saucepan over medium heat. Add sliced onion and cook till tender, 5-7 minutes. Add ketchup, brown sugar, vinegar, water and molasses and stir well. Add ginger, chili powder, garlic powder and cayenne (if using). Stir again and heat over low heat on slight simmer for about 10 minutes.

PORK AND SAUERKRAUT

Ingredients

3 pounds cooked pulled pork

2 pounds sauerkraut

4-5 medium potatoes

2 tablespoons butter

½ cup of milk or half & half

Salt & pepper

Directions

Peel and cut up the potatoes and cook in water to cover, in large saucepan, till tender, about 15-20 minutes. Mash the potatoes with butter, salt & pepper and milk. Add the milk a little at a time until you get the consistency you want.

Use the leftover pork from the slow cooker method above. Put in a microwaveable dish and heat till warmed through, 2 minutes at a time.

Heat sauerkraut in saucepan on stovetop till hot while you are warming meat.

Serve pork and sauerkraut over mashed potatoes.
