The weekly Frugal Recipe by JoAnn is Baked Stuffed Zucchini Boats. Both zucchini (.99/lb) and ground beef are on sale at Lidl this week.

Baked Stuffed Zucchini Boats

1 tablespoon olive oil

½ large onion, chopped

1 pound ground beef or ground turkey

2 tsp grill seasoning

3-4 large zucchini

1 cup spaghetti sauce

½ cup water

½ cup grated or shredded parmesan cheese

Preheat oven to 400 degrees.

Heat olive oil in skillet. Add onion and ground meat Season with grill seasoning and brown meat.

While meat is cooking, wash and cut ends off zucchini. Carefully slice in half lengthwise and scoop out the zucchini flesh. Leave enough to keep the squash sturdy enough to fill. (Save the scooped squash for a stir fry later in the week !)

Once the meat is browned, add spaghetti sauce and water. Turn heat down to simmer. Line a baking sheet with foil and arrange the zucchini boats and fill each with some meat mixture.

Bake in the oven for 10 minutes. Take out of the oven and sprinkle with the cheese and bake for an additional 15 minutes or until zucchini is cooked. Serve hot with garlic bread. Serves 4-6 people.

Note from Faye: I have made stuffed zucchini boats with shredded chicken or crumbled veggie burgers as well and they are great!
