Soul Fresh Spring Rolls, a veteran-run fast casual restaurant, has been selected as the next vendor to occupy a pop-up space at the American Tobacco Campus.

DURHAM, N.C. — A new food vendor has moved into the pop-up space at the American Tobacco Campus.

SoulFresh Spring Rolls has moved into a street level location at 359 Blackwell St. Justus McGee, a veteran Army Paratrooper and former teacher, pursued his love of cooking and founded SoulFresh Spring Rolls in 2017.

“I can’t remember a time I wasn’t cooking,” McGee said. “I can recall watching my Grandpa Arthur create feasts for our entire family inspiring me to consider a career making people happy through food. I whipped up my first barbecue sauce at ten which I served my fellow soldiers in front of the barracks at Fort Bragg on Smoke Bomb Hill and still serve to this day in the form of our Black is Beautiful BBQ Sauce.”

Some popular menu items include Chickpea Broccoli Mushroom, Buffalo Chicken Kale and the popular Thanksgiving Roll. SoulFresh uses organic vegetables, spices and non-GMO foods from area farmers markets.

Customers can enjoy Soul Fresh's healthy, grilled spring rolls until Jan. 31 at the pop-up space. The hours are Monday-Wednesday from 11 a.m. to 3 p.m., Thursday and Friday from 11 a.m. to 8 p.m. and Saturday and Sunday from 11 a.m. to 3 p.m.

PopUp @ American Tobacco Campus, which launched last July, is an initiative is meant to expose American Tobacco patrons to different shops and businesses in one setting. Coffee roaster Caballo Rojo, East Durham Bake Shop and furniture shop MicMag by Me, among others, have already occupied the street level, 1,483 sq. ft. space located at 359 Blackwell St.
