Cook like the Fair: Il Palio's deep fried delights
For the month of October, Il Palio is serving up three dishes that are inspired by the N.C. State Fair. Fried arancini with house-made pimento cheese, Fried house-made tiramisu, and the Poutine alla Amatriciana.

I'm happy to say that we are partnering again this year with our good friends at W. R, E, l and US Foods to bring you this exciting Siri's this time with a twist. We're doing a state fair edition, so you're going to get to see some of your favorite vendors making those delicious dishes as well as local chefs doing they renditions of state fair food. It'll polio in the Santa Hotel in Chapel Hill, North Carolina, as we enter October, I'm starting to think about NC State fair and all the food that we're gonna be missing this month. I know myself going missing all the food, going missing the animals and the rides and just the fair itself. It's a great time of year to get outside and experience those things. Take the family. Uh, so this year, it'll polio. Since there is no state fair, we decided to kind of bring some of the state fair home till polio and have it here for our our guests, who just are craving something fair light. So he took some fair food on Put North Carolina on Italian Apollo Twist on them on. That's what we came up with. I know there's all sorts of fried cheese dishes at the State Fair Way did, uh, risotto balls or aren chiney, uh, traditionally a fried rice ball with Parmesan and mozzarella Way skipped over the Italian cheeses and accepting pimento cheese on. We're serving it with the North Carolina pepper jelly. The poutine amatriciana. It's take on poutine. It's an Italian twist on it way much. China is one of my favorite sauce is made with my braising pancetta in tomato sauce with white wine and caramelized onions way. Then french fries, french fries. Tossed him with mozzarella cheese curd. Throw the tomato gravy on top of it on finish the plate with some mozzarella, some Parmesan, some extra virgin olive oil and some fresh parsley. And then, lastly for dessert, we have fried Hiramatsu. Um, I guess, as we've already shown, everything at the fair that inspires me probably comes fried. So for dessert, we took one of our well, polio favorites, uh, cut a slice of it while it was frozen, dipped it in some batter and fried it up. It comes out soft and tender on the inside, crispy on the outside. Sweet. Delicious. Um, I can't say enough fun things about that one. Make sure if you skip the other to get dessert. Uh, all these dishes, you don't even have to get past our bar or patio to get it. Uh, you can come and produced a snack and try it out.
