Cook like the Fair: Cool Runnings Jerk Chicken
This NC State Fair vendor shows us how they make their famous Jerk Chicken.

Hello and welcome to wre Els Cook like the pro Siri's My name is Chad Block Wilder with the North Carolina Department of Agriculture. I'm happy to say that we are partnering again this year with our good friends at W. R, E, L and US Foods to bring you this exciting Siri's this time with a twist. We're doing a state fair edition, so you're going to get to see some of your favorite vendors making those delicious dishes as well as local chefs doing they renditions of state fair food. This is Stephen in Andhra Millington from Cool Runnings, Jamaican, where vendors at the North Carolina State Fair and have been for about 21 years we will be demonstrating how we prepare our popular jerk chicken. For this demonstration, Steven will be seasoning £2 off chicken thighs. First we lightly seasoned the chicken way. Rub the seasoning into the chicken. Next, we will add three tablespoons off jerk seasoning to the chicken and rub the jerk seasoning into the chicken. People like you. Once we have completed that, we then refrigerate the chicken marinated chicken and have overnight for this video. We have already done this process. We then place the chicken in a bacon can way. Spray the pan lightly with pan just so that the chicken does not stick to the pan. We typically cover the pan with foil so that it will it will remain moist. Then we bake it at 350 degrees until cooked for about an hour. Or you may Grillet, typically on the island. Jerk chicken is grilled for our purposes, and the fair we bake it. It comes out justus. Good flavor wise. We've already baked and cooked the chicken, so now we will show you the finished product. We've prepared rice and peace and plantains, and we're serving the chicken that we cook today with the rice and peace and Clantons before you go, I just want to say cool.
