This morning we are talking to Amelia, the owner of Amelia Irene catering events, good morning to you and thanks so much for joining us. >> Good morning, I'm happy to be here. >> I should note we have just wanted over the fact that we are both Washingtonians fibers, but we are both living in North Carolina now. So before we talk about your journey operating the business during this difficult time, you had a really unique catering model, tell us about it and your journey, including starting the business. >> I decided, I had catered in the past, when I lived in DC. I had a small catering company and when I moved here, shortly after I moved here I was diagnosed with uterine and ovarian cancer and I knew I had to change my diet. I had already begun the shift of changing my diet and decided to go more plant-based, vegan, in order to help my health return as a result of the cancer diagnosis, and after that, as you can imagine, it was life altering to me. But the positive that came out of that is that I decided that was no time like the present to fulfill my dream, and one of the things I have always desired to do was to perfect my skill and go to culinary school. And once I continued that and finished my schooling, I decided to go ahead and do that. I was back and forth between here in New York, and I decided to go to that school because of its focus on plant-based food and vegan and vegetarian eating, and help, because I knew I needed to improve my health and well-being as a result. And because I had been in catering before, and primarily going to events, I realized there was a void for those individuals like myself, who want to be able to go to an event and get more than a tofu play, get more than the pasta dish, more than a solid solid. People don't have any solid options. So I decided to do a plant- based company, and being down here in North Carolina was hard because as you know this is barbecue central. And I'm going to do plant- based? Everyone down in North Carolina was like are you serious? And I was like yes, because there is a need. >> There is a big need. Tell us what kind of food you cook, tell us about the food and also how you are educating people about this vegan plant- based diet. >> Through classes, I have been doing one-on-one technique, but I also do one-on-one talks with individual so I can educate them about plant-based, and one of the things that is a deterrent for a lot of people is the lack of education. So I sit down and really explore what you need to put in your pantry, what type of ingredients do you need to have, do you have the staples in your kitchen, beyond just the salad mix. I when I asked Lord vegan diets years ago, really there were no options available to you. And so, as many people got bored, I decided, I decided how can I make this fun? I wanted people to appreciate eating well, but eating well when it tastes good. AND AFTER A QUICK RAIN DELAY THIS AFTERNOON, VENDORS, SERVING UP THE FAIR FOOD ONCE AGAIN. CARS SHOWED UP FROM ALL OVER TO WAIT IN LINE FOR ITEMS LIKE FUNNEL CAKE, CANDIED APPLES, PINEAPPLE DOLE WHIPS, SO MUCH MORE. MANY PEOPLE WAITED IN LINE FOR MORE THAN AN HOUR, BACKING UP TRAFFIC NEAR THE FAIRGROUNDS. WORKERS TOOK ORDERS, THEN HANDED THE FOOD TO THE CUSTOMERS WHILE THEY WOULD STAY IN THEIR CARS.
