Christensen's fried chicken restaurant announces opening date
Award-winning chef Ashley Christensen will open her first fast-casual chicken restaurant on Saturday, Oct. 30, in Raleigh.
Posted — UpdatedBB's Crispy Chicken, which is a partnership with MDO Holdings, has been in development for more than two years. The first location will open at 11 a.m. Saturday in the shopping center anchored by Wegman's. The development also includes Crumbl Cookies and Torchy's Tacos.
There are two more BB's locations under construction — one in Durham’s University Hill and another in west Cary’s Parkside Town Commons.
BB's menu will include five signature sandwiches and four different spicy sandwiches. Breaded and grilled chicken options are available.
All sandwiches will be served on locally sourced brioche buns and can be topped with any of the 13 house made sauces available.
Chicken nugget fans will want to try the Crunchy Dunkers, which are bigger than a traditional nugget. The nuggets will be covered in a gluten-free panko breading or available grilled.
There will be two salad and two wrap options on the menu, including the “Pimento Toastie” which can be filled with crunchy or grilled dunkers.
Side items include sweet potato waffle fries, sea-salt brined French fries and North Carolina’s Ashe County cheese curds made with a gluten-free panko breading.
“From the start, we have wanted to highlight the overall greatness of the chicken sandwich. I also knew we wanted to share this with the world, so it brought a completely different level of focus for me and necessity for sensational flavor profiles throughout the menu," Christensen said. "I was so focused on getting this right that I moved a frying set-up to my front porch so that every time I had an idea, I could simply go fire it up and try another iteration. We probably tried over 2,000 chicken sandwiches before landing on this final recipe. I really believe what we are about to unveil is greatness.”
MDO Holdings CEO, Michael Olander Jr., said work has been put into the back-end technology and ordering process to make it more efficient. Guests will be able to order via BB's app for iPhone and Android or through its online ordering system. In the restaurant, guests can use the regular register or order from their table by scanning a QR code.
Derek Ryoti, AC Restaurant's Director of Operations, has been named Director of Operations for BB's Crispy Chicken. Christensen’s mentor and former Wake Tech Culinary professor, Jeff Saudo, will be the brand's Director of Culinary Hospitality.
In addition, Human Resources consultant Denise Leerkes was brought on board to create inclusive policies and procedures, according to MDO Holdings.
Full-time team members will receive a benefits package that includes paid time off. Officials also say that tip sharing should ensure all team members would be earning $15 per hour or higher.
