Whether you’re on a diet or you just can’t justify eating ice cream, s’mores and all of summer’s dessert pleasures in the same day, choosing roasted strawberries as an alternative to s’mores the next time you’re by a campfire won’t leave you feeling like you missed out.
This recipe for roasted strawberries comes from GoodCook and can be made with two simple ingredients: strawberries, of course, and marshmallow fluff.  By simply skewering a strawberry and dipping its tip in marshmallow fluff, you’re ready to create a t(o)asty treat.
Just hold your skewered strawberry over the flame of a fire — or even a gas stove, if you’re indoors — and cook it until the marshmallow fluff is nice and golden brown.  They’re ready to eat straight from the skewer.
Or if you decide to go a slightly less healthy route, those strawberries could also be used to create a yummy s’more after all!
A recipe from Baker By Nature shows just one of the ways you can use roasted strawberries to enhance this summertime treat. This version of a roasted strawberry cheesecake s’more suggests layering roasted strawberries on top of a cream cheese filling, roasted marshmallow and chocolate.

Finally, squish it all between two graham crackers.

So if you’ve got the cheesecake base spread onto a graham cracker and a piece of chocolate on top, all you have to do is roast your marshmallow fluff-covered strawberry to complete this delicious recipe!

If you follow along exactly with the Baker by Nature version, however, you’ll see that there’s really no campfire necessary. You can make this using only the oven if that works better for your summer setup!

And if you like the idea of incorporating fruit into your campfire cooking, you can branch out to include more than strawberries. Bananas make a nice addition to marshmallows and chocolate.

S’mores banana boats from the Crafty Morning blog, for example, can be wrapped in tin foil and cooked over a campfire or placed right on top of the grill.

All you have to do is slice a banana in half lengthwise and sprinkle mini marshmallows and chocolate chips on top before wrapping it all in foil.

When everything’s nice and melty, it’s time to top it with graham cracker crumbs and eat.
