Banana Blueberry Walnut Bread recipe

A delicious banana blueberry walnut bread just came out of my oven and I wanted to share the recipe. It's so easy and tastes wonderful! What do you like to put on banana bread - butter, cream cheese, Nutella or something else?

Banana Blueberry Walnut Bread

A delicious banana blueberry bread just came out of my oven and I wanted to share the recipe. It's easy to make and tastes wonderful.

It was so good plain that we didn't even add butter or cream cheese. There may be some cream cheese involved tomorrow morning, though.

I made a few changes to her recipe including: adding 3 bananas instead of 4 because that is all I had on hand, adding 2 eggs instead of 1 (every banana bread recipe I have ever made had 2), adding 1/2 tsp cinnamon, using only white flour because that is all I had, and adding crushed walnuts to half of the top of the bread before cooking (my youngest doesn't care for walnuts so I did not mix them in to the batter).

Here is the amended recipe:

Banana Blueberry Walnut Bread

Ingredients:

3 bananas, mashed

1 cup fresh blueberries, washed

1 and 1/4 cup flour

3/4 tsp baking soda

1/4 tsp salt

6 tbsp butter, softened

3/4 cup light brown sugar

2 eggs

1 tsp vanilla

1/2 cup chopped walnuts (optional)

Instructions

Preheat oven to 325 degrees. Butter and flour the bread pan. I use a 5" x 9" loaf pan.

Put mashed bananas in large mixing bowl. Stir in softened butter, eggs, sugar and vanilla.

Combine flour, baking soda, salt and brown sugar in a different bowl.

Pour 1/2 of the flour mixture into the banana mixture and stir until combined.

Put the blueberries in the remaining flour mixture and coat the blueberries with the flour. It keeps them from sinking to the bottom of the pan when baking.

Add the blueberry and flour mixture to the banana mixture and stir until combined. If you are adding walnuts to the batter, you can add them to the mix now.

Pour the batter into the bread pan. If you are just sprinkling a few crushed walnuts on top, add them now.

Bake uncovered for 55 - 65 minutes until toothpick comes out clean.

(At 50 minutes I covered mine with foil for another 5 minutes and it was done.)

Enjoy plain or with butter, cream cheese, peanut butter, Nutella, etc.
