Chef Nunzio Scrodo from Driftwood Kitchen & Bar shares his recipe for Meatloaf with Tasso Ham Gravy, a dish described as "comforting and simple."

Meatloaf

  • 1 lb. ground pork
    • 2 lbs. ground beef
      • 3 eggs
        • 1 red bell pepper (chopped)
          • 1/2 yellow onion (chopped)
            • 1 cup panko bread crumbs
              • 1/2 tbsp ground ancho powder
                • 1/3 cup bbq sauce
                  • 1 tbsp salt
                    • 1/2 tbsp coarse black pepper

                      Saute peppers and onions until soft. Let cool. In a large bowl, mix everything together except the meat. Then, mix in the meat.

                      Create rectangular loaves and cook on 200 degrees for 2 hours.

                      Tasso Gravy

                      • 1 lb. tasso ham
                        • 1/4 lb. butter
                          • 3/8 cup flour
                            • 1 bunch scallions (sliced)
                              • 3 cloves garlic (sliced)
                                • 1 cup mushrooms (cooked)
                                  • 1 qt. cream
                                    • 1 qt. milk
                                      • 1 tbsp salt
                                        • 1 tsp coarse black pepper
                                          • 1 tbsp worcestershire sauce
                                            • 1/2 tbsp tabasco

                                              Melt butter in a pot, add the tasso ham. Cook for 5 minutes. Add flour and mix well on low heat, stirring constantly. Cook 5 more minutes. Add everything else and cook on low for about 30 to 40 minutes until it is boiling and thickened.
