What's on your menu for the week?

This week, we'll be eating:

Meatless Monday: Teriyaki tofu, stir fry zucchini, onions and mushrooms, rice

Cajun shrimp on a romaine salad with lots of veggies and Texas Toast (on sale at HT through Tuesday)

Italian chicken in slow cooker on Sister Shubert Hawaiian rolls (used BOGO raincheck and .75/1 coupon at HT last week), roasted sweet potatoes, carrots and mushrooms

Swiss cheese and mushroom quiche, fruit salad

Beef hot dogs, mashed potatoes, steamed broccoli

Healthier Deviled Eggs: I was really craving deviled eggs this weekend so I made a healthier version, as you can see in the photo above.

I mashed up 1 egg yolk with 1 tablespoon light mayo. I divided the yolk mixture into 6 egg white halves. Then I topped them with McCormick pasta salad seasoning. I ate them with spinach and tomatoes drizzled with a touch of balsamic dressing. Delicious and it was the perfect snack with only 150 calories!
