It's spring break week here, so although I am doing a meal plan, it's a very flexible one.
Here are the 5 meals I am planning for the week. Depending on our activity schedule, the day we eat each meal may be different than what I am indicating below. But - we'll be eating the meals below - just not really sure which day they will be served. Sometimes it's nice to have a little extra flexibility!

Chicken Parmesan using the $1.66/lb chicken from HT through 4/3 and the Kraft Fresh Taste I got for free (using a coupon from Vocalpoint.com, I think)
Whole grain pasta

Tuesday
Breakfast for dinner with omelets, veggie bacon, whole wheat toast or biscuits, fruit salad (the .99 pineapple from Aldi is delicious!)
Wednesday
Teriyaki tofu and vegetables – tofu free at HT during triple coupons
Brown rice
Egg rolls (Kahiki egg rolls from Lowes Foods when BOGO with $1 Penguin coupon display coupon from last week)
Thursday
Spaghetti with vegetarian meatballs
Sugar snap peas
Friday
Boneless eye of round in crockpot
Crockpot veggies including sweet potatoes, white potatoes, carrots, onions, mushrooms
Matzo ball soup
Strawberry cheesecake
