A Western Spud Heads East

Huckleberry Gold is a small potato, golden within a robe of regal purple, that delivers smooth texture and rich flavor. It was developed from European and American varieties by a group of plant breeders in Idaho, Oregon and Washington, and the potatoes are now distributed nationwide by Race-West, a family company based in Clarks Summit, Pennsylvania, that specializes in root vegetables. I quartered and roasted them, peel on, with excellent results.
