Monday meal plan 5/30
Summer temps are officially here which means you won't be seeing a lot of oven cooked meals in my house for the next few months! On the menu this week we have grilled staks, grilled smoked turkey hot dogs, creamy slow cooker chicken breast, sweet and sour shrimp and more!
Posted — UpdatedAs I type this meal plan, it is a balmy 95 degrees outside. Summer temperatures are officially here which means I am cooking a lot less in the oven. I don’t like heating up my house with the oven or paying the high cost of cooling the house back down once I have heated it up. When I do need to cook in the oven during the summer, I try to do it at night (if possible) and then reheat in the microwave the next day. Over the next few months you will see many more slow cooker and stovetop meals as well as sandwiches and other cold dishes.
What are your favorite summer meals?
Grilled tenderloin steak that my Dad brought over (thanks Dad!)
Corn on the cob
Pasta salad with veggies
Ice cream cake
Local strawberries with whipped cream
Grilled smoked lowfat turkey hot dogs (Butterball deal from a couple weeks ago)
Buns (on sale at Food Lion through 5/31)
Leftover pasta salad with veggies
Leftover corn on the cob (6 for $1 at Food Lion through 5/31)
Local strawberries
Creamy chicken breast in the slow cooker(chicken breast on sale at Kroger for $1.99/lb, Philly cooking cream was free during recent HT super doubles promo)
Egg noodles
Sautéed green pepper, mushrooms and onions
Tomato and cucumber salad (chopped tomatoes and cumbers with Italian dressing and a little shredded mozzarella)
Contessa Sweet and Sour Shrimp (found it in my extra freezer – can’t remember when I got it or how much it was but you know it was on sale with a coupon!)
Brown rice
Sugar snap peas
Sandwich night
Not sure yet – maybe out to dinner with a Groupon or Twongo deal!
