Used 16 oz mushrooms (I love mushrooms)
Used 2 lbs chicken
Used 1 cup of unsalted chicken stock so there would be more sauce, which tasted great on the noodles!
Added garlic powder (about 1/2 tsp) to the boiling mushrooms and onions in broth
Used cheddar and parmesan instead of mozzarella
Used 1/2 yellow onion sauteed with mushrooms instead of green onions at the end
I didn't pound the chicken. Instead, I cut the breasts in half longways before dredging in flour and browning.
I cooked the chicken for 20 minutes, then topped with the cheese and baked another 6 minutes. Soooo good and there is leftovers for tomorrow's lunch!
Baked mushroom chicken that I had planned to make last week but we ended up having something else (chicken on sale at Lowes Foods through 10/5 for $1.79/lb -a very good price for boneless skinless chicken breast -and on sale at Kroger for $1.97/lb through 10/9)
Egg noodles
Broccoli (BOGO for $1 a bunch at Food Lion through 10/5)
Grapes (.99/lb at HT through 10/5)
Tofu and vegetable stir fry ($1.79 package of extra firm tofu from Trader Joes, yellow squash, zucchini, onions, mushrooms sautéed in teriyaki sauce) – squash on sale at Kroger for .99/lb through 10/9
Mahatma Rice (free after sale and .75/2 coupon at HT through 10/5)
Pear slices (.99/lb at HT through 10/5)
Spinach and cheese quesadillas
Corn
Pineapple (on sale $2.99 for a whole pineapple at Kroger)
Boca spicy veggie chicken sandwiches on whole wheat pitas with lettuce and tomatoes from our garden - Boca burgers on sale for $2.50 - $1 printable coupon (no longer available) = $1.50
Mac and cheese
Sugar snap peas
Mushroom and spinach quiche (using .25/dozen Davidson's BOGO eggs at Lowes Foods this week with .75 coupon through 10/5)
Croissants (bought with sale and coupon during HT super doubles a couple weeks ago)
Sliced fruit
BBQ chicken on the grill
Foil veggie packets on the grill (mushrooms, zucchini, squash, onion with Italian dressing)
Pasta salad
Not sure yet….. maybe a roast in the oven or homemade veggie soup with crusty bread (depends on how cold it is that day)
