Monday meal plan 8-23
It's a busy first week of school so we are enjoying some not-too difficult favorites this week.

Chicken Nuggets (purchased during HT super doubles with BOGO sale and coupon)
Saffron Rice
Tomato and mozzarella salad (using garden romas)
Chicken, cheese and veggie quesadillas (using $1.49/lb chicken breast from Lowes Foods special a few days ago at local location – I posted about it on the blog on Saturday). Boneless chicken breast is also on sale at Kroger for $1.99/lb through 8/28 and Food Lion for $1.97/lb through 8/24.
Tortillas were free during HT super doubles.
Spanish rice
Grapes (.99/lb at Kroger through 8/28 and .99/lb at Food Lion through 8/24)
Ravioli (BOGO a couple weeks ago for $2.50/bag)
Garlic bread
Salad (using garden veggies)
Shrimp salad on bed of fresh spinach, tomatoes from the garden and avocado (shrimp on sale BOGO for approx $4.50/lb at Food Lion through 8/24 and Buy 1 Get 2 free for approx $4.33/lb at HT through 8/24). Recipes are found at link in the box above. I included 2 recipes because some like a spicier shrimp salad and the Old Bay adds great flavor. I usually cube the shrimp into smaller pieces than the recipe calls for.

Corn on the cob .29 each at Kroger through August 28
Sauteed squash (from the garden) and onions
Pillsbury Crescent Rolls (on sale with coupon and HT buy 20 items get $6 off promotion through August 8/24)

Breakfast for dinner!
Omelet bar with choice of ingredients including fresh spinach, onions, mushrooms, cheese, veggie bacon crumbles. The kids love to choose and add their own toppings to their omelets. Eggs are BOGO at HT through 8/24 for .67/dozen!
Whole wheat pancakes
Fruit (Walmart has had blueberries on sale for $1.40/pint for a few weeks. I hope they have continued the sale this week because they will be great on the pancakes!)
