Monday meal plan 6-21
With the first day of summer here, you will find lighter meals with more veggies and fewer meals cooked in the oven.

For the next eight weeks, while summer is here, the kids are out of school, and I am juggling full-time kids and full-time work from home, you will notice that the meals are lighter and simpler. They will include more veggies from the garden and involve less cooking in the oven. I try not to use the oven as much during the hot months to keep the house cooler. Instead, we use the grill and stove more often. Please feel free to share your favorite summer recipes!
Spinach, mushroom and swiss quiche
(Quiche made using cheap eggs from Food Lion with coupon I posted last week on blog, free swiss cheese from Food Lion with coupon I posted on blog last week, spinach from our garden and mushrooms on sale at HT for $1.89 through 6/22) See the link to an easy quiche recipe in the box above. The recipe calls for cream or whole milk but I use 2% milk. You can also find the link to the egg coupon (which expires 6/22) and the cheese coupon (which expires 6/29) in the box above.
Veggie bacon slices on the side (Morningstar Farms brand veggie bacon free from Walmart using gift card from cashing in credit card points - don't worry, we pay off our credit card in full every single month!)
Fruit salad (peaches – 69/lb at Lowes Foods through 6/22, cantaloupe - .99 each at Food Lion through 6/22, Mangoes – 3 for $1 this week at Kroger, blueberries, 18 oz - $3.33 at Kroger this week)
Grilled Salmon
Zucchini (from our garden) and Vidalia onion sautéed
Whole wheat pasta with a touch of butter and parmesan
Grilled portobella fajitas with Italian dressing marinade (portobella mushrooms are on sale at Kroger this week through 6/26 for $2.50 for a 6 oz container)
Included in the flour tortilla fajitas are spinach and tomatoes (from the garden), sliced red pepper ($1 on sale at Kroger last week), Vidalia onions, guacamole, salsa
Long grain and wild rice
Easy baked cheese ravioli (Celantano frozen ravioli BOGO a couple weeks ago)
Broccoli (Steamfresh)
Cucumber and tomato salad with light Italian dressing
Veggie burgers on whole wheat buns (cooked in the skillet)
Salad
Not sure yet – something easy since I will be tired after teaching the Coupon Camp at Wake Tech!
Grilled chicken breasts (on sale at Kroger last week for $1.99/lb)
Pasta salad with tomatoes, peppers and onions
