Thanks to all for the kind thoughts about dad. He is doing great. We was discharged this afternoon and is resting comfortably.

Not sure what dinner will be tonight but I will be heading to the store in a bit once my reinforcements arrive.

jdouglas13 - sounds like a great veggie meal!

Dinner tonight will be my leftover ham and swiss club from lunch.

Faye - I hope your Dad is doing well.

Probably leftovers for me tonight--made a batch of chili mac last night, and forgot how much it yields, especially for one person! Also having it for lunch today--I have a feeling I will be "over it" by tomorrow--but it beats having to fire up the stove/oven for a night or two. :)

YBAverage, I finally got a chance to read Tuesday's dinner thread.

Home fries!! I love home fries! How do you make them? I think they are a Northern thing. Are you an ex-Yank?

I can remember my Mom making them back in the day. Panfried with lots of onion slices and seasoned salt, if I remember correctly. Soooooooooooooo good!

DW needed a day to sleep yesterday at the hospital and asked me to say home, so I got quite a bit of stuff done. I even made it to the supermarkets.

On the menu tonight: I marinated a package of boneless chicken breasts in EVOO, lemon juice, garlic, Italian herb blend and will be grilling it tonight. I have the components for potato salad all set to go. I will also be making some Caesar salad dressing to have later this week with cold slice chicken over Caesar salad. Kind of excited for all the salad and veg that we haven't been able to have since DW got sick in January.

What's everyone else doing for dinner tonight?
