Barbiedoll1967 - I am sorry about your DH diagnosis. Been there and done that with my DH. I agree with Observant. Take the classes. They help you have the knowledge to start eating correctly. Small adjustments can make big changes to the numbers and big adjustments can make small changes. You just have to find the lifestyle change you both can live with. I will caution you to remember you can not control every bite your DH eats. This was one of the hardest lessons for me. All you can do is prepare the best healthiest meals when they are home and try to educate their families and friends. Good luck.

Dinner tonight is leftover chili. DH has to work late and is on his own.

BARBIEDOLL1967 - Good Luck to you and your husband ! We found many digital books free thru our library , NOOK and Kindle .
It was a good way to judge a book before buying .

We have leftover tortellini so I think we'll have that with meat sauce, garlic bread and salad.

Barbiedoll, I'm sorry as well. Everyone gave lots of great suggestions! One other thought, Amazon is a great source of used (cook)books as well for really good prices, although you do have to pay shipping (usually $3.99). You might find something there.

Observant, great job on getting that A1C number down!

    Welcome back Twinredheads!

Not sure about dinner. It is so warm today, I'm tempted to make a Caesar shrimp salad. Also wondering if I should make some bread or rolls in case we lose power with the coming snow over the weekend.

Barbiedoll - I'm also sorry about your husband's diagnosis. You have probably already seen this website, but it has lots of healthy recipes and tips on developing a diabetes meal plan from the American Diabetes Assoc.:

BARBIEDOLL1967 - I am sorry about your husband's diagnosis ! Check with you husband's doctor and/or insurance . He (and you) may be able to attend free diabetic education classes and a visit or phone consult with a diabetic nutritionist/dietician. I found both to be very helpful . I still speak with a nutritionist anytime I want for free ( visits are small co-pay) .
A scale and small containers were helpful to me to learn portion control .
READ LABELS - hidden sugars and carbs are everywhere ! ( some peanut butters are more sugars than peanuts !). A serving of carbs is 12 to 15 grams( some disagreement there amongst professionals) - so a cookie with 23 carbs is close to or over 2 servings .
3 servings per meal is the standard recommendation .
it is a lifestyle change not a prison . I brought my A1C down from 8.1 to 6.7 in 3 months after I was diagnosed and I did not eat rabbit food all the time . LOL

Boston Pork Bu*T cooked in slow cooker -use as pulled pork ( $.98/lb. at Just Save last week ), little potatoes - 'stewed" or roasted (?) and broccoli or peas and carrots.

Barbiedoll, go to a used bookstore and get a couple of diabetic cookbooks. Lots of good, easy recipes ! Tonight is grilled chicken tenders on a big green salad :)
