    EM2S- oh yum... will try some Cajun flavors next time! And your dinner sounds delicious.

    Nakabi- Hi!!! Hope you're doing well :)

    Jdouglas- I've been on the hunt lately for brisket that doesn't cost an arm and a leg, as I have the best recipe for Beef Brisket in Beer from an old (very old) Cooking Light magazine. Your version over egg noodles sounds great!

    Aerogirl2084 and EM2S - thanks! I'll let you know how the brisket turns out. I just got home, and it looks/smells pretty good. I plan to thicken the sauce with a little cornstarch and serve it over egg noodles.

    I forgot to mention I also added a 14 oz can of petite diced tomatoes to the slow cooker when I made the brisket.

    Tonight we are having homemade chili that I made over the weekend with cornbread and side salads. It's warm outside but it still feels nice and cool in our house so the chili works :-) We started a "sugar fast" just before Halloween so we are not having any desserts until Thanksgiving. We just need a break before the holidays hit ;-)

    I'm loving all the ideas!!!
    Tonight is chicken caccatore (chicken was .29/lb at one of the storesbin the area, tomatoes and onions are from the garden) on the menu on top of spaghetti squash( squash is from the garden) in place of the noodles. I also made macaroni and cheese (spaghetti squash and a blend of different cheeses). Green beans from the garden with walnuts and cranberries.

    Oh...got stuck in a zucchini boat memory and forgot to share our menu for tonight. :) Freezer finds of mango, banana, chopped spinach, feta and phyllo, so... spanakopita, traditional Greek salad, pecan tarts and mango-banana smoothies made with plain Greek yogurt.

    JDouglas13 - Your freezer find sounds yummy! Look forward to hearing how it turns out.

    RaleighFoodBlogger - Thanks for sharing your seasonings! Zucchini boats are a personal fav of mine ... esp like them with a Cajun kick ;-)

    JDouglas--that dish sounds like it will turn out great--sounds like you seasoned it well, and the beauty of the slow cooker is that it really brings out the flavor with the 'low and slow' method of cooking--you'll have to let us know how it turns out! I need to expand my repertoire of slow cooker recipes--maybe I'll try this one--thanks for the idea! :)

    I actually got up kind of early this morning and got dinner going in the slow cooker. I even browned the meat first. Beef brisket (discovered in the freezer yesterday) cooked with onions, garlic, mushrooms, lots of seasoning, red wine and Progresso French onion soup. Hoping it turns out good. My success rate at slow cooker dishes isn't great. LOL

    Dinner with friends tonight: Sweet & sour meatballs as appetizer, then chicken pot pie. Chicken filling is already cooked. Just need to heat in oven. I use a sheet of puff pastry on top instead of regular pie crust all around. Once filling is hot, will throw on the top :)
