    I actually have dinner in the oven at a normal hour for a change! Meatloaf (from the freezer made previously), mashed potatoes, and roasted Brussels sprouts from a whole stalk of them I got today at Trader Joe. I can remember my Dad buying them when he went grocery shopping, so it was a nice bit of nostalgia for me.

    meredith88 - and if you have any veggies to saute (like mushrooms, asparagus or spinach) those would be great on it as well. Enjoy!

    Thank you Faye and TwinRedHeads for the recipes. I will try one of them for dinner tonight! I am in the mood for pasta, I'm just not feeling any of the typical heavy sauces, so it's a good time to try something new!

    Thanks to everyone for sharing your breakfast meals (or lack of). We get up so early that I have to have protein in me during the first hour or I am starving!

    twinredheads - I love your lemon pasta recipe. It's almost like a stroganoff with the sour cream.

    meredith88 - One of my girls is a total minimalist when it comes to food. She likes butter and parm and that's it. I put additional pepper (sometimes lemon pepper) and garlic powder in the bowl for the rest of us, but I pull her serving out first.

    MEREDITH88 - I use leftover angel hair (you can use spaghetti instead) to make lemon noodles. In a small saucepan, melt 4 Tbsp butter. Remove from burner and mix in 3/4 cup sour cream and 3 Tbsp. lemon juice. Pour over your noodles (2-3 cups of pasta) in a pyrex pan and toss to coat. Bake in the oven on 350 degrees for approximately 20 minutes (noodles start to get slightly crispy). Remove from oven and sprinkle with parsley, salt and pepper to taste. It also tastes good with 1/4 cup of parmesan on top as well. My husband loves this.

    Breakfast rotates for me whether I am home or not- if I'm home it's usually a protein smoothie with some fruit or if I am at work cottage cheese with fruit or a granola or protein bar.
    Dinner tonight is grilled London broil $3.49 lb from Kroger with .99 grilled eggplant and maybe a baked potato with it.

    I don't eat breakfast. I wait to eat until I am truly hungry which for me is around 11am so I eat an early lunch and dinner and that's it for me each day.

    I'm not sure what dinner tonight will be. It needs to use the leftover spaghetti noodles in my fridge but I don't want spaghetti or alfredo. Faye, what is in your butter parm pasta and would it work as an entree?

    Two huge mugs of very strong Italian roast coffee :) No food until mid afternoon for me.

    I eat the same breakfast almost every day...a fried egg and a slice or 2 of baked deli ham on a bagel thin. Low cal and lots of protein to start the day...along with 2 cups of coffee ;) No idea about dinner tonight...maybe leftover ribs.
