We had Lemon-Garlic Shrimp and Vegetables that was so tasty that I wanted to share the recipe:

Last night was chicken cacciatore with shredded chicken, carrots, mushrooms, onions, garlic, and celery over rigatoni. Super yummy! And, there's enough left for another night.

Tonight we're having mushroom and bacon quiche with some Gruyere I found marked down at HT. Hopefully a side salad if the romaine hearts are still good. Dessert is vanilla ice cream with homemade blueberry sauce.

Tomorrow we will finally have the Chinese chicken salad I mentioned the other day. I picked up a fresh pineapple on sale today at HT, so that will be going into it as well.

Grilled porkchops or grilled chicken both I cooked last night so it's leftovers tonight... my family can't stand leftovers.

We will be having leftovers from Sunday today. Slow cooker bbq pork loin, corn on the cob and avacado.

Last night's meal was quick and easy, we had burgers with trimmings (FL prior weeks meat deal combined with ibotta $2 rebate made our burgers from freezer a grand total of $0.25! ... on HT 8pk buns for $0.77), grapes ($0.79/lb Aldi), celery sticks ($0.99 Aldi) and family-size bag of Lay's potato chips ($1.99 Kroger).

Tonight's supper is spinach, feta and beef empanadas (free frozen chopped spinach from Kroger, feta from freezer - a prior HT super doubles deal, beef - using food processor to ground leftover burger and half from last night) with Pace Picante Sauce (FL deal), grilled fruit skewers and black bean/corn/red pepper medley.

Tomorrow night's menu is chicken/grape/celery/walnut salad in lettuce cups (Tyson grilled and ready chicken was free w/ HT raincheck and super coupon doubles, Aldi grapes & celery, Fisher shelled walnuts $3.49/10 oz bag with coupon at Target), blueberry-peach torte. [ all the talk of cheese cakes here on the blog finally got me ;) ]
