    Gator Girll - OH NO! That's a big let down. But your plan B dinner sounds truly delicious!!

    Tonight the little people had grilled cheese sandwiches AND chicken enchiladas with fruit on the side. Don't judge. It was clean out the fridge/freezer night and there was a teenage boy here to feed as well. :-) I will be having a Greek yogurt and protein powder smoothie when I finish my workout. Aren't you all jealous?? LOLOLOL

    Tonight was mostly staged last night, so things are nicely chilled: coursely pureed gazpacho (great Kroger veggie sales) served with chilled asparagus spears (sale at Walmart $2.02 - .25 ibotta) rolled in Land O' Frost deli meat ( $1.44/16 oz after Kroger Mega sale, .55 coupon & ibotta), hummus (HT sale) and wheat pita points (Walmart $1.19/bag) and peach tea (HT free Lipton's tea infused/steeped w/ peelings of peaches). Dessert is peach-pecan muffins topped with fresh sliced peaches and a squirt of Ready Whip Cream.
    Tomorrow night: Ratatouille w/ homemade crustini (bagette HT markdown), slices of HT mozerella & swiss cheese, honeycrisp wedges (HT bulk markdown 2.5 lb bag $1.66,) lemonade & Mayfield pecan ice cream ($1.25 HT after sale, $1 coupon & .25 ibotta).
    Friday night: black bean nachos topped w/fresh corn-off-the-cob, sweet peppers, vidalia onion, finely diced jalapeno & Mexican blend HT shredded cheese baked approx 10m, top w/shredded lettuce & diced tomatoe

    Dinner tonight is Lasagna from the freezer that a friend gave us. I had planned on it for Sunday dinner but it didn't thawed in time. We will have a side salad with it.

    Gator Girll, I know how frustrating it is when something you KNOW you bought disappears like that. I'm so sorry! :(

    Last night ended up as fend for yourself, so DW and I had assorted leftovers. Actually, I was happy that they didn't go to waste. The pork loin was divided into 4, packaged, and frozen. The eggplant is still waiting in the fridge.

    I bought a big package of 12 chicken drumsticks on sale at HT this afternoon. They are a possibility with baked sweet potatoes and a salad. If I cook the whole package, tomorrow DW can have leftovers while I have eggplant parm, which she doesn't eat.

    What is everyone else doing for dinner tonight in this hot weather?

    I was planning on fixing a crock pot beef roast with onions, carrots, and potatoes for dinner tonight. But after an exhaustive search of the fridge and freezer, the pot roast apparently never made it home from the store last week. Plan B will be thin sliced beef stir fried with onions, peppers and mushrooms with au jus served open-faced on a roll with melted provolone cheese. Not sure what the side will be as yet.

    Tonight we are having rotisserie chicken thighs. I got them at HT last night. With the end of night coupons on them I paid $1.49 for 2 very large thighs. We'll have them with mashed potatoes, the last of the fried eggplant, caesar salads, and more fresh watermelon.
