    Tonight is chicken fajitas. Cooking chicken leg quarters (3) in the crock pot - bought on sale at HT back in March-with Wildtree fajita seasoning. I will shred that and will combine with the red & yellow peppers I got at HT week before last. They've stayed fresh in my fridge thankfully! Not sure about a side just yet. Maybe mahatma yellow rice from HT sale.

    Coupon4Me- that sounds delicious! I'm heading out in a few weeks to visit my folks, so I think I might do something like that for my husband to heat up while I'm away.

    And tonight I'm doing another 4 day meal- 2 Pork Tenderloins (on sale at FL) and a huge pan of roasted organic carrots, sweet onion, sugar snap peas and zucchini roasted. I'll also make up a big pot of jasmine rice for the 4 days. And will supplement w/spinach salad (with craisins and pumpkin seeds) a few of the nights if the need arises. Otherwise, the spinach will go in my breakfast eggs :)

    I ended up going home from work really sick yesterday and sleeping for 4 hours. One of my coworkers brought over supper for my husband while I was asleep which was awesome! It was a rice, black bean, corn and sausage casserole. It was so yummy! Eating it was a terrible idea though but it tasted good at the time ;-)

    It's back to work today on a Gatorade diet and one of my other coworkers brought me spaghetti and meat sauce so I won't have to cook tonight when I get home :-) We have fresh green beans at home that we can saute to go with it. Not sure yet if I'll feel like eating but I'm loving this break from cooking and all of my thoughtful coworkers for giving us these meals!

    Dinner is Spinach stuffed shells (super simple to make), tossed salad and garlic bread.

    Picked up boneless pork cutlets from FL, manager's special, plus had $1 off coupon, so just over $1 for each chop. Going to pan fry with a hoisin glaze. Big salad with lots of sale veggies.

    coupon4me - Those chicken cutlets sound like a great make ahead meal for hubby to throw in the oven tonight. I'm going to borrow the idea the next time I am making them. And that is a super score on the Italian bread from Kroger!

    Tonight we are having Tofu, Take 2. We did not have the tofu planned for last night so it is re-appearing on the menu tonight. Yesterday ended up being leftovers.

    Twinredheads that sandwich from yesterday sounded so good! And great advice on shaken boiled eggs. I will def. try that!.

    After dinner last night I made breaded chicken cutlets with cheese and sauce so all hubby has to do tonight is throw it in the oven and make the whole wheat pasta. We will have that with .49 marked down Italian Bread from Kroger (how great was that!?)
