    Barbiedoll, cook the lasagna noodles in water. Cook chicken (I use boneless skinless breast), onion and broccoli together. Let cool, mix with ricotta cheese. Spread a little of chicken mixture down middle of noodle, and roll up snugly. Put in casserole dish seam side down, put spaghetti sauce over top and sprinkle with mozzarella and/or parm cheese. Bake till hot through, about 30 minutes :)

    Tonight we are having beef stir fry. I cooked it this weekend so all I have to do it heat it up :-) It includes thin slices flank steak, broccoli, cauliflower, snap peas, carrots, water chestnuts, red bell peppers and onions. It'll be served over rice. Side salads using some beautiful organic spring mix that was marked down at HT last night topped with cucumbers, carrots, peppers, mushrooms, and whatever else I find in the fridge... anything is fair game on a salad ;-) We also have some grapes and strawberries to go with it.

    Tonight we are having leftover pasta and homemade pizza from the last 2 nights as well as watermelon and a caprese salad.
