Thanks so much for your very kind words, GranofTwenty, and everyone else who has been so awesome to me over the last few days.

I flew back in this afternoon. DW is cooking!! Burgers (maybe on the grill?), gnocchi, and roasted broccoli. I usually just steam/nuke it, but the microwave finally gave up the ghost while I was away.

Tonight we are having ratatouille served over penne pasta. The ratatouille was made by a friend from her garden last year and canned so I'm excited to have some "fresh" vegetables in the middle of winter :-)

Last night we ended up having the baked tilapia so tonight we are finally having the teriyaki tofu with veggies. I have a bunch of mushrooms (YAY!!) and I'll saute them with zucchini and onion slices.

raesmom1612 - those baked apples sounds amazing! I could probably eat 3 of them as well. And a big happy birthday to Rae!! Such a big girl now.

Thanks for sharing your meals everyone!

Yummy on the apples garnertoy. I have a recipe that I use (for the crock pot of course) that is stuffed apples. You core them and stuff them with an oatmeal, cinnamon, Brown sugar, butter, and raisin mixture and put them in the crock pot for 4 hours on high......serve with vanilla ice cream.......I don't even like apples.....but I can eat about 3 of those :)

Tonight dinner is pizza at Cici's in honor of the bday girl.
