    DH has requested meatloaf. So dinner is hamburger & pork meatloaf, mashed potatoes, and butter beans.

    Happy birthday Garnertoy! I hope you get a yummy no cook meal.

    Last night's dinner ended up being mince, basically a hamburger stew with carrots and gravy, with mashed potatoes. I did get some nice small sourdough bread boules which will make for great bread bowls for soup. They are on sale for $1.50 each at HT this week. I'm thinking maybe a chicken corn broccoli chowder for them.

    Thanks Observant. I am trying my best to get rest, but man oh man with a toddler, a belly and a police officer working night shifts every few days my level of ease does not go down until about 3 am and then I'm up at 5 and 7 again.......potty breaks in between don't help either lol. Thanks for the info on the sweet potatoes. I'm really hoping for these things lol

    RAESMOM1612- I hope you are getting enough sleep !!
    I like fresh sweet potatoes - more flavor. I discovered baking the sweet potatoes before using in recipes - bake to the point they are "potato salad" done not "mushy done" .
    You can bake them a few days ahead and let cool ( or freeze to use later ) - peel and use as recipe calls for on another . I use a pecan ,brown sugar & butter topping on my casserole .

    Oooohhhhhhh coconut is different! And I LOVE coconut. Is your recipe the same as the others? So far I'm getting boil, peel, mash (should they be sliced??) season with brown sugar and cinnamon, add topping and bake. I would love to try the coconut though sounds amazing!!!

    Raesmom - I feel for you on the comfort thing. About the sweet tater casserole - I prefer fresh taters in mine. I also usually make one 9x9 pan with the marshmallow topping and one 9x9 pan with a coconut topping.

    Tonight we are having garlic shrimp and pasta with rolls and a salad for dinner.

    Todays my birthday so its where ever my family takes me. Because the kitchen is closed today. lol
