    Your salad sounds yummy Faye. I hope you get to try the Craisins/dried cranberries on a salad. My DW absolutely HATES cranberry sauce, but loves dried cranberries, in case that helps anyone who was wondering about that.

    We had a dinner salad last night too. I sautéed some fresh corn and a red onion. Set aside to cool. Chopped up 2 tomatoes and an avocado. Sliced up a grilled steak really thin, and mixed it all together with some romaine. The dressing was super simple -- just put everything in a jar with a good lid and shake it well -- EVOO, juice of half a lemon, balsamic vinegar, a heaping tablespoon of grainy Dijon, 2 tablespoons of honey, and a little S&P.

    I had planned on making tofu, but decided I wanted chicken breast on a salad instead. Everyone else had mac & cheese as well. Tofu is on the menu for tomorrow....probably. :-)

    McCormick makes a yummy salad toppings mix with sunflower seeds, soy bacon bits, crouton bits, etc. It's delicious on salad. After the discussion about sunflower seeds and dried cranberries on salad last week, I have been craving it.

    We are also having pizza tonight! And as is quite the rarity we are ordering pizza! We got a couple coupons in the mail last week for a free large 1 topping pizza from Jet's pizza which just happens to be my husband's favorite pizza place. So we are getting one of our free pizzas tonight so we can eat dinner quickly before a night of scout meetings. Not the healthiest meal but it's fast, easy and free so it'll do :)

    Jdouglas- it's a fantastic place! I haven't been for a few years, but now that I'm closer, I'm sure I'll be visiting again frequently. They have delicious and healthy food to go (or eat in) plus amazing homemade bread. I think you'll love it! And yum on your white pizza... and entire menu.

    RFB, I just looked at Neomonde's website - wow! I will definitely have to stop by the next time I'm in the area. Just the mention of baklava had me sold!

    Dinner tonight is white pizza topped with crispy proscuitto and a side salad. Tomorrow is going to be burgers on the grill with the rolls I made recently, potato salad, and tomato salad. Friday is going to be chicken something with pesto. Look at that, will ya! A menu! LOL. Of course, I may forget it completely when it's time to cook. ;)

    RFB, I did a little looking around, and Amazon has dried gigantes beans. You might find them at some of the international food markets, or maybe even Whole Foods?

    Still on the lookout for gigantes beans, so tonight I think we'll do the Greek Burgers with spinach rice and a Greek salad. I did my weekly shopping at Trader Joe's yesterday, and was surprised again how well I did ($100) for a full week of food. This included a ton of organic produce, grass-fed beef, and the good feta cheese!
