    At long last, I finally got my pork chop dinner. Pork chops, stuffing, and butter beans. I also have chicken baking to make chicken salad with for tomorrow.

    Tonight we are having chicken parmesan over spaghetti. We'll probably have a mixed salad on the side and maybe some green beans.

    Last night I had oven "fried" pork chops but the chops were so big I only prepared one of them for DH and myself to share. So tonight I am using the left over pork chop to make sweet and sour pork over jasmine rice.

    Raesmom -- Sometimes our e-friends are a lot more supportive and helpful to us than our physical "friends". That's a good thing.

    Yum dinners everyone. RFB~meat sauce over sweet potatoes!! YESSSSSS

    I haven't made a meatloaf in forever thanks for the reminder. I may do that instead of baked ziti later this week. Tonight will be creamy pork chops in sausage gravy, biscuits, mashed potatoes, and carrots......comfprt food.

    BTW mom and grama are both finally doing really good. After a brief stay in the hospital for mom again she is home received some really awesome news........she will be getting her prosthetics in a month!!!!!! On the grama front, she and dad are leaving Puerto Rico on Tuesday!!! Oh how I wish I could be up there to see her and spend some time with mom now that she is finally home. Thanksgiving cant get here fast enough!!!! Thanks for all the thoughts and prayers you guys. Through this crazy time of my life I am glad that I have a circle (or blog) of positive people that I can turn to and vent if need be :)

    Meatloaf, baked potato and green beans. Family meatloaf recipe is so good and everybody who has had it loves it
    1.5 lb. ground chuck (best meat/fat ratio)
    1 egg
    1 cup bread crumbs (I take 3 slices of whole wheat bread and grind up in food processor)
    1/4 C. chopped onions
    1 T. Worcestershire sauce
    1/2 t. ground mustard 1 and 1/3 cup milk 1 tsp. salt 1/8 tsp pepper Mix all and put in a loaf pan. Will look quite soupy but that is what makes it so moist. I spread a thin layer of ketchup over the top and bake at 350 for 1.5 hours. Put in/out the same time As baked potatoes. Yum!
