    ascherer - the enchiladas your DH made sounds great! Did he use any chicken or beef or cheese in the filling or just beans and sauce?

    The BBQ enchiladas turned out really well. DH mixed sour cream, baked beans, and BBQ for the filling. The enchilada sauce was mixed with BBQ sauce for under and over the enchiladas. Of course lots of cheese. The BBQ sauce is DH recipe. It starts with a gallon of vinegar and a whole jar of red chili flakes.

    DH is cooking dinner tonight. He has some BBQ (vinegar based) that he wants to use to make enchiladas. He is substituting baked beans for refried beans. We will see how it turns out.

    Granoftwenty- we're looking to buy. I was ALL about leasing for years and years, as it was nice to have no ties, and no maintenance fees. But, I think we're finally ready to settle down again :-)

    We looked at Lake Royale years ago for a weekend place it was beautiful .

    Grilling hot dogs, making a "tangy" coleslaw (no mayo). Watermelon for dessert ! (Whole melons on sale at Lowes Foods).

    jdouglas....Vollmer Farms and Ray Farms are both big producers. I use the small local farmers for "putting up corn and peas" in the summer. (I literally look in the local paper and watch for signs)...LOL!! Can't pass up the opportunity to have "fresh" veggies in the winter. It's A LOT of work, but worth it!!

    RFB...Bunn Lake is my exit for heading home to Lake Royale from Raleigh everyday. I do think you will LOVE the area. My drive from Lake Royale to work is 45-50 minutes. I am 20 minutes BEYOND Bunn Lake, so you can figure from there. I do travel at less peak times as I go in early and am off at 3:30pm. GOOD LUCK with your search!!

    Jdouglas- good to know! I'm looking by the Bunn Lake area. Downtown Knightdale is about 13 min. away, and I just looked and I think they have a farmers market (plus, is it just me, are any of you Tractor Supply lovers!! :-) Glad you wrote on this, as I really appreciate all input possible before jumping into it! I don't think the development allows trash burning (they're pretty strict) But there are fields nearby. No wonder people stay put for so long... moving is a stressful pain! :-)
