hollyh515 - I hope the gest. diab. test was negative and that you are somewhat comfortable...if that's possible! Enjoy the pasta. :-)

Gator Girll - that crust on the tenderloin sounds wonderful.

Nanee Lion - my teriyaki tofu and veggies was delicious tonight (I know you wish I saved you some, lol) but I wish I had come to your house - your menu is awesome for tonight!

All of your dishes sound delicious. I think since my glucose tolerance test to rule out gestational diabetes is over I will have some type of pasta dish tonight after everyone is talking about pasta with red sauce!!

  • Gator Girll May 27, 2015

We're having a roasted pork tenderloin with a cracked pepper crust served with sauteed apples, either broccoli or cauliflower, and splitting a baked potato.

I also got the makings for pasta in a red sauce (been craving it lately) that I will make either tomorrow or Friday. I always get Dreamfields pasta too (thin spaghetti) as my hubby is diabetic and it is tasty.

Forgot, we are actually having sweet potato pie with cool whip (thanks to Mrs. Smith) . Found these for like $.99 or $1.99 back sometime ago from HT. Smells wonderful.

Having grilled chicken marinated in Italian dressing, corn on cob (FL sale), green beans with tomato, bacon and onion, slaw, crescent rolls and watermelon. Just cut the watermelon from sale at HT last week and it is wonderful.

Thursday: Pork Roast, creamed potatoes, butterbeans (because my Granddaughter is coming after school and she loves this menu.

Friday: Salad with grilled chicken and garlic bread and of course watermelon.

Saturday & Sunday: Not quite sure.

Raesmom- have you tried spiralizing zucchini? I just found a website www.inspiralized.com that has TON of recipes. I made the Italian Pasta Salad the other day for lunch. And while it was not as good as pasta, I will say it satisfied the craving I've had for pasta salad :-) The brown rice pasta is also really nice at Trader Joe's. I can't really tell a difference unless I eat it plain (but who does that?!)

Raesmom - if you want pasta and to stay on the weight lose plan try Dreamfield pasta. It is made for diabetics. While it still has the carbs it does something with the glycemic index. It does not create the sugar spike that normal pastas do. This is the only pasta we use now that DH is Diabetic.

Twinredheads - Actually pasta sounds really good. I may have to make some tonight. Thanks for the suggestion.
