    Raesmom - I am glad you are not trying to make the trip with just one driver. That is a long trip to make for a three day weekend.

    Raesmom, I'm glad you're not doing that drive by yourself with Rae. That is a loooong drive.

    Faye, I vote for pasta with the shrimp. Sounds really good.

    Very simple dinner tonight since DW and I were out all day and are kind of exhausted. We got our marriage license!! We are very excited. Although I've always called her my DW, we are actually making it official. Dinner tonight is going to be Caesar salad with the leftover dressing I made yesterday and burgers on the grill

    raesmom1612 - that sounds like a wise idea regarding your trip back home. And well done on the ribs - clearly they were a hit!

    Our dinner plans went up in smoke. One child is sick (seems to have a cold) and sleeping. The other one ate already and we have enough leftover BBQ chicken that we are just going to finish it up on rolls with the leftover watermelon and mango. The shrimp will have to wait until another night.

    RFB - the mini quiches sound super.

    DH and Rae must have LOVED dinner last night, usually we have a few BBQ ribs left over.......they are GONE!!!

    I decided not to go home (too long of a drive to make alone with Rae) so we are holding off until the 4th of July so that DH can come and spend time with mom and help me drive :)

    Baked Chicken for dinner tonight with mashed potatoes and veggies........maybe some biscuits.

    Savvysaver- that lasagna sounds delicious! I've not tried one in the crock pot before!

    CDAVISMK1- your crock pot meal sounds delicious too... enjoy your time off together :-)

    Tonight we're having leftover steak, and I'm going to make some mini quiche on the side in muffin cups using broccoli, spinach, swiss and plain yogurt (and eggs, of course!)
