    twinredheads - spinach is a great thing to have an abundance of! I like it in spinach and cheese enchiladas and quesadillas, any sandwiches or wraps, & veggie lasagna.

    Thanks for all the spinach tips everyone! Salad is always my go to but was looking for something a little more creative. I'll let you all know if I can't use it all and where to pick it up :)

    LOL Faye I knew you would like that one!! After all you have done for our family over the past 3 years it was the least I could do. Hope you can use most of those ;)

    Thanks for the link RFB......never tried BBQ sauce on my meatloaf......I use salsa like the salsa for chips and salsa to give it a nice taste, along with adobo, bread crumbs and eggs.

    RFB~I am def gonna give the mini meatloaves a shot tonight....do I just prepare as I would a normal meat loaf and just fill the muffin tins half way? Should I use cupcake liners? should I spray with non stick spray? or grease the muffin tin with butter? As always thanks for your help :)

    Jdouglas and Raesmom- I hope you try them, they're so easy! And yes, in a regular muffin tin (don't fill all the way up as there will be a bit of grease as they bake depending on the fat% of ground beef you buy). And jdouglas, hope your flight goes well!

    Tonight pork chops on the grill maybe brushed with BBQ sauce
    sides/veggies to be decided : produce stand /grocery store/find in freezer
    dessert optional tonight - maybe fresh fruit and cheese

    RFB's mini meatloaves sound really good. You make them in the muffin tin, right?

    Twinredheads, I am envious of your spinach! I'm thinking fresh spinach salad with mushrooms, crumbled bacon, and blue cheese dressing; stuffed peppers with rice, spinach, tomatoes, and mushrooms; homemade creamed spinach -- super easy with a white sauce seasoned with salt and dehydrated onions or onion powder. If you still are overloaded, I'd be glad to take some off your hands! :)

    Flying home late today, so our dinner is going to be a rare treat of takeout Chinese.
