Raesmom- they're super simple, just fill up a muffin pan with the mix about 3/4 of the way and bake at 350 until they're cooked through (I'm thinking around 25 minutes- but it's been awhile). They're so fun! You could even "frost" them with mashed potatoes and decorate them with peas :-)

If you do a search online, you'll find a ton of recipes. I think I used the one from Rachael Ray in the past.

Tonight is grill BBQ pork chops with baked beans and a salad. If I make it to the story we might have grilled corn on the cob with it.

Jdouglas- thanks for the reminder on meatloaf. I think I'll do some in the muffin pans this week... love how they get that "crust" all around them!

RFB - love your salad, especially with the fennel!

Raesmom - glad you got an early BD dinner. A girl can never have too many BD dinners! :)

Faye, your dinner sounds nice and healthy! The veg sounds really good.

Dinner tonight is the meatloaf that never did get made last night. Maybe mashed potatoes and a salad. Of course, the meatloaf can just as easily turn into burgers on the grill. ;) DW is the family grillmaster LOL

Raesmom- how fun! I love Carrabba's.

Tonight we're going simple and having a chicken chopped salad with artichoke hearts, avocado, fennel and an apple cider vinegar honey dressing.

Tonight we are having a blog favorite (LOL): Teriyaki tofu with zucchini, squash and onions. Also having corn on the cob from Kroger and rice.

    Raesmom - happy almost birthday!

cdavismk1 - that sounds awesome! I love Brunswick stew - especially Parkers in Wilson!
